Chicken thyme and life is fine!  A great chicken noodle soup just has to be one of the main food groups of good home style cowgirl cookin’. The secret to tasty chicken soup? Fresh ingredients and great seasonings!  The combination of 14 different herbs and spices in this packet, along with a few fresh ingredients, will make your own chicken soup a family delight in no time. Don’t be chicken to try it, we've made it easy!

Recipe for Chick-A Delight ~ a great chicken noodle soup

Recipe for what you need to make the soup:

4 oz  of good wine for the cook!              
1  Tbls  butter or olive oil
1  small onion chopped (about 1 cup)
1 lb boneless, skinless chicken thighs cut in small cubes
2  carrots – chopped in small pieces
2  stalks celery – chopped in small pieces
4  cups  (32 oz) chicken broth
2 cups  water 
Herb/spice packet (The special part of the whole thing!)
6 oz  pasta – flat noodles if you are traditional or some fancy shaped bowties, twists, radiatori, penne if you want to charge it up a bit!

Recipe for just how you make the soup: 
Pour wine in a nice glass and slowly sip as you proceed…      

In a 4-qt. soup kettle, sauté chopped onion in butter or olive oil for about 5 minutes till soft. Stir occasionally. 

Add chicken pieces and sauté till pink is gone, about another 3 minutes. Keep stirring a bit. 

Add chopped carrots, celery, chicken broth and water. 

Dump in that special seasoning packet.

Bring to boil then turn down and simmer covered, for 30 min. Stir occasionally to avoid scorching any veggies!

Now throw in the pasta and cook another 12 –15 min until the  pasta is cooked and tender….but not soggy!

Scoop up a spoonful and sample so you can add salt and pepper to taste. We try to keep the salt low so you can add it to your liking. 

As soup cools it can thicken. Thin with water or chicken broth or consider it stew or a casserole!
