Chili and beer have gone together ever since the wild west was born! At a wild barn stomping dance at the Cowgirl Ranch when the Texas Two Step became a multi-step, a can of beer was knocked into the chili kettle! The cowgirls found out by that accident that beer IN chili became a delicious ingredient. Deep and robustly chili tasting this seasoning packet has become a favorite of the cowboys who hang out at the ranch. We’re sure your “cowboys” will like it too!  

The seasonings combine the best of what makes chili good (plus some beer!) and it cooks in an hour. Even richer if it just sits there simmering for longer or is cookin' away in a crock pot all day till the dinner bell rings. Named after a ranch turkey named Wilde who ran a fowl of whiskey.

The whimsical Cowgirl Ranch story on the package features a drunk turkey, a beautiful female fowl who saves him, entrepreneurial spirit and…..well… you’ll just have to read the story:                             

Drunken Turkey

“There once was a drunken turkey. His drinking habits had caused many an issue at the ranch. Wilde, the uninhibited drinking fowl, picked fights with the horses (he didn't win!), staggered around the barnyard and even tried to convince a ewe to run off with him. The cowgirls had to do something! They thought perhaps a woman could straighten him out. So to the ranch came Henny Hetty, the prettiest turkey anyone had ever seen, well, as pretty as turkeys can really get! Of course Wilde was smitten with love the first time he laid gobbler eyes on her!     

 Henny demanded that their romance would go no farther until he quit drinking, cold turkey!  Wilde was torn between liquor and love. Henny was also quite the little entrepreneur. She had watched Peter the rabbit create "Hopper Beer", make it a sought after national brand and now he was a retired hare without a care. Henny and Wilde put their wattles together and created a dynamite new bourbon! He gave up drinking and started bottling. "Wilde Turkey" was soon the most desired bourbon on the market! The cowgirl ranch flourished with liquor tours and baby bourbon chicks!”

Moral: A lot of liqueur is better outside the body rather than in it. 

Recipe for Drunken Turkey Chili 

What you need to make the chili:
1 can of good beer for the cook!
1 small onion chopped (approximately 1 cup)
1 pound  ground turkey (You can use ground chicken if you have to.)
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) dark red kidney beans, drained and rinsed
1 can (15.5 oz) diced tomatoes undrained
1 can (15.5 oz) crushed tomatoes 
1 can (4 oz) diced, mild green chili peppers 
Herb/Spice packet (The special part of the whole thing!)                
1 cup (8 oz) beer (Now we know this leaves some beer in the can so you will just have to figure out what to do with it.) You don’t have to use “Hopper Beer” because you probably won’t be able to find it!

Just how you make the chili:
Pour beer in a nice glass and enjoy as you proceed…

In a 4 qt. soup kettle, sauté chopped onion and turkey until onion is translucent and pink is gone from turkey...5 min.

Drain and rinse the 2 cans of beans.  Rinsing gets rid of the starchy/salty water in the can that can affect taste & increase sodium content. Rinsing canned beans also gets rid of much of the gas-causing enzymes that make you....well...you know!

Add the beans, diced tomatoes, crushed tomatoes, diced chilies and beer to the kettle. Dump in that special seasoning packet and stir the whole thing up a bit.

Bring to a boil then turn down and simmer covered for 30 min. until all the ingredients have a chance to party and mingle. Stir occasionally to avoid burning the hearts out of those little chili beans or chili love is not gonna happen!

Adorn your chili with chopped onions, shredded cheese, more diced chilies, sour cream, cilantro ...any or all!
