Chili is an old west chow time favorite! It has graced bowls and tables from coast to coast and provided fodder for many a contest as to who has the best. But hold your horses about deciding on a favorite until you've tried this easy cowgirl version! It's not too hot but full of the love of the chili bean. You can always add more "hot" to chili, but you sure can't take it out! Named after two young horses who fall in love and...well, you'll have to read the story. The seasonings combine the best of what makes chili good and it cooks in an hour. Even richer if it just sits there simmering for longer or is cookin' away in a crock pot all day till the dinner bell rings. It will become your families favorite!

    "There were two horses once, a fast racing colt named K Hot Dash, and a sweet little filly named K Loverly. Born the same year, they grew up playing horse games together. They raced through the pasture, slept back to back under the chestnut tree and ate their hay nose to nose.     
    They were inseparable…but then separation came! “Hot” headed to the race track and became a racing phenomenon. But there was always a little
    sadness in his eyes. The lovely “Love” dominated the show ring, winning ribbon after ribbon as her graceful trot carried her around the arena. But there was always a distant look in her eyes.       
    Careers rise, peak and then begin to decline. “Hot” retired sound after many races and moved back to spend his last days in the pasture where he was born. One day a fancy horse trailer pulled up and …….off sprang “Love”! Retiring from the show ring, she also came home to greener pastures. With wild whinnies, they recognized each other immediately, their eyes sparkled and forever after they became inseparable.           Moral: With a little horse sense, friends will always find each other in the pasture of love."

    Recipe for Hot Love Chili 

    What you need to make the chili:
    4 oz  of good wine for the cook!
    1 small onion chopped (approximately 1 cup)
    1 pound  lean hamburger
    1 can (15 oz) pinto beans, drained and rinsed
    1 can (15 oz) dark red kidney beans, drained and rinsed
    1 can (15.5 oz) petite diced tomatoes undrained
    1 can (15.5 oz) crushed tomatoes
    1 can (4 oz) diced, mild green chili peppers
    1/2  cup water
    Herb/spice packet (the special part of the whole thing)!

    Just how you make the chili:

    Pour wine in a nice glass and slowly sip as you proceed…

    In a 4 qt. soup kettle, sauté chopped onion & hamburger until onion is translucent and pink is gone from hamburger...5 min. Drain off any excess hamburger oil.

    Drain and rinse the 2 cans of beans.  Rinsing gets rid of the starchy/salty water in the can that can affect taste & increase sodium content. Rinsing canned beans also gets rid of much of the gas-causing enzymes that make you....well...you know! 

    Add the beans, diced tomatoes, crushed tomatoes, diced chilies and water to the kettle. Dump in that special seasoning packet and stir the whole thing up a bit.

    Bring to a boil then turn down and simmer covered for 30 min. until all the ingredients have a chance to party and mingle. Stir occasionally to avoid burning the hearts out of those little chili beans or chili love is not gonna happen!  

    Adorn your chili with chopped onions, shredded cheese, more diced chilies, sour cream, cilantro ...any or all!
